The mix up: level is not what installers are checking
Most homeowners hear flooring and subfloor talk about flatness and assume it means the same thing as level, because a bubble level is the tool everyone already owns and has used. That belief exists for a reasonable enough reason. A floor that is wildly out of level does feel wrong to walk on, so it seems like the obvious thing to check. But a bubble level tells you whether a surface sits on a true horizontal plane relative to gravity, and a floor can pass that test completely while still failing the check that actually matters to an installer.
What flatness actually measures
Flatness is a local measurement, not a global one. It asks whether the surface has humps or dips relative to itself over a short span, regardless of whether the whole room subtly slopes from one side to the other. A house built a century ago can have a floor that drops gently across an entire room and still be perfectly flat in the sense that matters, because there are no sudden high or low spots for a rigid material to bridge. The tool for finding those spots is a straightedge, a long, rigid board or metal bar laid across the subfloor. Wherever daylight shows under it, or a feeler gauge slides into a gap, that is a low spot. Wherever the straightedge rocks instead of sitting flat, that is a high spot.
Why the tolerance is not one universal number
Different materials tolerate different amounts of variance, because they respond to a hump or a dip in different ways. The tolerances in play are tighter than most people expect. They are written in fractions of an inch measured under a straightedge, across a span of floor, rather than in anything you would notice walking across the room, and they are checked from the high points of the surface down. Rigid tile and stone want the tightest control of all, since a lippage at the edge of one tile against the next is both visible and a place fingers and mop heads catch. A floating floor over an attached pad forgives more, since the pad itself absorbs some minor variation. The exact number that governs a given job comes from the flooring or adhesive manufacturer's own installation instructions for that specific product, and it is worth reading rather than assuming.
What follows once the subfloor is checked
A subfloor that is out of flat does not automatically rule a room out. It changes what has to happen before the new material goes down. High spots typically get sanded or ground back. Low spots get filled with a leveling compound rated for the job. Skipping that step, or discovering it on install day instead of before, is where floors go wrong later: a hollow tick underfoot at one plank where adhesive never actually touched the subfloor, a seam that opens because two boards were never sitting in the same plane, or grout lines that crack at a spot the tile could not fully support. None of that is about the flooring failing. It is about what was under it never getting corrected.
